Caprese Style Pizza Bread

These are scrum-diddly-umptious, super-duper-easy, and oh-so-quick! Seriously, you only need four ingredients and fifteen minutes. These Caprese Style Pizzas are perfect for a mid-day brunch, sleepover, tailgate, or even an evening by the pool…

What you’ll need — INGREDIENTS:
6-10 whole Deli Rolls or Crusty Italian Bread
32 ounces Fresh Mozzarella Cheese
8-10 Tomatoes
20 ounces Basil Pesto
Optional: Avocado, for serving Ing 1

I used Bel Gioioso Fresh Mozzarella; its a glorious porcelain white cheese that’s made with pasteurized cow’s milk in Wisconsin. I found it in the deli section of my local Kentucky Kroger store… and the best part; it’s pre-sliced!

I didn’t realize how amazing Basil Pesto was until I ate at a vegan restaurant in California last October. I ordered a pizza and it arrived at my table covered in “green stuff” — not the familiar red sauce that normally covers pizzas in Kentucky… it only took one bite, and I fell in love… Thanks SoCal, for the Basil Pesto!

How to do it — INSTRUCTIONS:
Preheat the oven to 375 degrees. Cut the rolls in half…

… and lay them on a baking sheet. The rolls I used were also from the deli/bakery section of Kroger; I used a simple whole wheat deli bread… But you could also use baguettes, crusty sandwich rolls, or french bread.

Then slice some tomatoes!

Put a dollop of basil pesto on each slice of bread… I put approximately 1 and 1/2 tablespoons of basil pesto on each slice.

… and spread it evenly over each slice of bread.

Now it’s time for the cheese… the amazing… the beautiful… the glorious… the cheese!

Pile the cheese on top of the basil pesto…

… and BEWARE; Dogs appear at the sight of cheese! Say “hello” to Daisy and Charlie.

Then pile on the sliced tomatoes…

And then throw ’em in the oven for approximately 10 minutes. You want the cheese to slightly melt, and the bread to get a little crispy!

I like to add fresh avocado to a couple of mine… so open up a couple avocados, and discard the seeds…

Using a knife, very carefully cut the avocado flesh into thin slices… be very careful not to cut through the avocado skin…

… and use a spoon to scoop out the avocado flesh!

… and there ya’ go! Avocado slices for your pizza bread!

Now, pull the pizza bread from the oven, and serve!
