My puppy chewed a hole through the couch and pulled the stuffing out. So, I decided to channel my frustrated energy into something positive… Cooking lunch… so here is the step-by-step recipe to the scrumptious lunch I made myself today; Chicken Quesadillas and Guacamole.
Or, maybe I should call it a “Couch-a-dilla”.
What I used — Lunch Quesadilla INGREDIENTS:
1 large Tortilla Shell
1 Chicken Breast (cubed and cooked)
Salt and Pepper, to taste
Tony’s Creole Seasoning
3 tablespoons Butter
2 tablespoons Olive Oil
1/2 cup Shredded Cheddar Cheese
1 Green Bell Pepper
1/2 cup chopped White Onion
Hot Sauce, to taste
For the ridiculously simple Lunch Guacamole I threw together some random stuff I had laying around; 1 Avocado, 2 tablespoons Salsa, 2 tablespoons Green Onion (chopped), 2 tablespoons White Onion (chopped), Juice of 1 Lime, Garlic Powder (to taste), and Creole Seasoning (to taste).
However, if you want a more complex Guacamole you can try my recipe for Avocado Pineapple Salsa.
What you’ll need to do — INSTRUCTIONS:
Cube a raw chicken breast. Season the chicken generously with salt, pepper, and Tony’s Creole Seasoning. Melt two tablespoons of butter in a skillet with two tablespoons of olive oil, over medium-high heat. Cook the chicken until done. set aside. Do not clean the pan.
Chop up the green bell pepper and toss it in the pan with the leftover butter and olive oil. Let it cook 3-4 minutes until it begins to soften. Remove the bell pepper from pan and set aside. Chop up 1/2 a cup of white onion while you wait.
Measure out some shredded cheddar cheese… and you’ve got yourself a Quesadilla bar!
The Quesadilla will cook pretty quick, so at this point I take a break from making the Quesadilla to throw together some really simple Guacamole…
Again, if you want a more complex Guacamole you can try my recipe for Avocado Pineapple Salsa.
In a bowl add; 1 avocado, 2 tablespoons of chopped white onion, 1 tablespoon chopped green onion, 2 tablespoons salsa, a dash of Tony’s Creole Seasoning, a dash of garlic powder, and the juice of 1/2 a freshly squeezed lime.
Mix all the ingredients together and transfer them to a serving bowl… I always add extra lime, just because!
Now, back to the main attraction… the Quesadilla. Melt one tablespoon of butter in a large cast iron skillet (a non-stick skillet would work as well).
Throw in your tortilla…
*Helpful Housewife Note: I made a fold-over Quesadilla, so I only added ingredients to 1/2 of the tortilla.
So, add a handful of cheese…
… followed by a handful of the cooked chicken.
Throw on some of the wonderfully crunchy white onions…
… and then add some of the beautifully sautéd green peppers.
Top it off with some hot sauce… and a little more cheese!
Now, using a spatula, fold over the tortilla shell…
… and let the Quesadilla cook for just a second, being careful not to burn.
Then, channel all the focus of a Jedi, and while using the Force, flip the Quesadilla… let it cook for another minute…
… and remove it from the heat.
Cut it up, and ENJOY!
It’s so good it almost makes me forget there are holes in my couch… almost.

I love using Creole seasoning in my Quesadilla! Gotta love puppies!
I want to put Creole seasoning on everything, and so does my husband… Have you ever tried it in eggs? It’s amazing!
I haven’t but I am going to now! I’m the same way, I put Creole seasoning on everything. It has replaced season salt salt / pepper for me for a bunch of recipes
